Let me just say that this is a quick and cheap recipe. I'd like to post again when I can make everything from scratch (well, except the fettucine; I don't have a pasta attachment for my Mixmaster yet!), but right now that's not an option, even though I'd like it to be. Another time.
Serves 2 - 3
In the Greens Pan...
In the Greens Pan...
~1.5 Tb. olive oil
2 cups of greens (I used spinach + Swiss chard)
5 small-medium cloves of garlic, haphazardly minced
dash of salt
Other Ingredients
1 box of fettucine noodles
1 jar of Bertolli's Garlic Alfredo sauce
basil + parsley
parmesan cheese
Rinse your greens and chop them well, into quite small pieces (I wish I had done this, so you do it). Start boiling a pot of water for the noodles, and at the same time put a medium frying pan on low-medium heat. Put the olive oil and greens in the frying pan, and cover it with a lid (that allows some steam out!).
Once the water is boiling, add the fettucine and cook according to the box's directions.
Stirring.
Greens: The Beginning
Greens: The Middle (This is when you should add the minced garlic, making sure to get it touching the bottom of the pan so it can have some fun in the olive oil).
Greens: (Near) The End
Drain your noodles and let them sit in the colander as you add the alfredo sauce to the now-empty pasta pot (burner off!). Add the drained noodles, basil + parsley, and parmesan, and mix well.
Then, mix in the sautéed garlicky greens. Best served in a bowl, with a side of garlic bread, and a little more parmesan on top. Bon appétit!
