Okay so the fancy, super-detailed name for this recipe is "Parmesan and Basil Encrusted Salmon with White Wine Cream Sauce" but I don't really think of it that way, and I don't want to name my food something that belongs on a trendy menu (matte, cream, minimalistic, only one page) that doesn't list prices at all, or instead puts the price a subjectively reasonable distance to the right of the food's name, dollar sign omitted, obviously (dollar signs on the menus are the surest sign of an unhip restaurant).
So, this is Salmon and Cream Sauce, and it tastes way more deliciously complex than it is to make, which is all that I really need to know.
Also, this is a recipe for one, a.k.a. an "ALL BY YR LONESOME DINNER!" Fuck you, people who never have to eat alone. This recipe is not for you companied ingrates! This recipe is highly political in that it rejects the notion that spending time with yourself and doing daily activities alone is embarrassing or sad or pathetic. On an apolitical level, this is a creamy, wonderful dinner for you alone and no one else! Best enjoyed in your underwear with copious amounts of wine and music. Eat chocolate with your bare hands afterwards.
Salmon from my family that lives in the north of my state! They caught it in Alaska.
Ingredients
1 salmon filet
butter, for pan-frying
salt + pepper
1 Tb. parmesan
2 tsp. dried basil
Cream Sauce Ingredients
1 tsp. lemon juice
2 Tb. white wine
1/4 c. heavy cream
salt + pepper
Prepare the salmon first. Melt 1 Tb. butter in a frying pan over medium heat. Cover the skinless side of the salmon filet with salt, pepper, basil, grated parmesan (in that order is best). Rub it in a bit, very gently. Once the butter is melted, put the salmon skin-side down and let it cook for 3 minutes. While it cooks, work on your cream sauce (set a timer so you don't forget about the salmon!) Don't move the filet around. Flip it, let the skinless side cook for 4 minutes, and plate it.

Melt the butter in the sauce pan over medium heat (I totally cheated and used a too-small pan because I didn't want to add more dishes, and it was already dirty. Also, note the fucking filthy stovetop. 20-year-old 4 lyfe!).
Once the butter is melted, add the lemon juice and white wine. Bring it to boil. Add cream, and stir for about 10 minutes. Mine didn't thicken much, to be honest. Maybe you can help me out if yours works better. Add salt and pepper whenever you want! Then pour on the salmon generously.
Eat with a side of potatoes gratin dauphinoise, as pictured! Or any other side (rice! another potato dish!) Adding a side vegetable is preferable, but we're poorly stocked in that department this week.

Light a candle, listen to music (above), drink a big glass of wine, and enjoy this meal all by your lonesome. Then brag about how put-together you are ("I made a luxurious dinner last night, how was your Lean Cuisine? Boom! Roasted.") to your friends at work tomorrow.
